EASY Pork & Chive Dumplings

Ingredients:

  • 200g pork mince
  • 1 egg
  • 3 tbsp chicken stock
  • 2 tsp cornflour
  • 1 tsp sea salt
  • ½ tsp sesame oil
  • ¼ finely sliced spring onions
  • A small clove of minced garlic
  • Wonton wraps
 Method:
  • Mix all of the above with a fork until ‘pasty’.
  • With one wrap, using your fingers or a brush, dampen half of the circle edge with water
  • Add a small amount of filling (not too much, if too full they will burst, but enough to make it full, nothing worse than air pockets!)
  • Close the wonton pressing edges together.
  • Put into the dumpling maker and press firmly - then you’ll have perfect dumplings!!!
  • Can be cooked fresh or easily frozen (and can be cooked directly from frozen).
  • Nice with rice and steamed veg, or simply add into noodle soups.
    • Note : if using in soup, boil the wontons separately in water and then add in at the last minute. They are starchy and will make the stock/soup heavy if boiled with the stock etc.

Three ways to cook:

  1. Steam in a steamer pot; or
  2. Boil gently in water for about 12 - 15 minutes (checking after about 10 to see if cooked); or
  3. Pan fried - a little oil in the pan, when lightly brown on one side, add a little hot stock and place a lid on quickly - careful as it will spit.  Then steam gently till liquid evaporated - half fried / half steamed … so delicious!!

Serve with dipping sauce of choice:

  • Sweet chilli sauce OR;
  • 4 tbsp chilli oil / 4 tblsp light soy, 2 tbs white vinegar, ¼ clove finely chopped garlic & 2 tblsp finely sliced spring onion - mix all together
